News 12 is showcasing some of the different ways Hudson Valley businesses are reinventing themselves during this "new normal."
We're Open! spotlights businesses that are open and adapting to new guidelines, we are checking in to see how they are doing.
This week, News 12's Nikita Ramos takes us shopping and to two of the best restaurants in Beacon: Sukhothai and Ziatun.
Sukhothai is a local favorite where guests can enjoy a taste of Thailand.
"I like to say we have something for everyone," says owner Ray Rabenda. "Everything is made to order."
Rabenda says there are many vegetarian options and that meat can also be removed from any order.
Sukothai has adapted to new regulations since COVID-19. The owner says he has focused a lot on takeout, which he says has really become a business in itself.
Indoor dining is open at 50% capacity as well as outdoor dining.
Nikita's second stop adds a bit spice to the palette - Ziatun has been serving Palestinian cuisine to the Beacon community for the past four years.
Ziatun is known for its falafel, pita, hummus and plant-based dishes loaded with protein.
Ziatun owner Kamel Jamal says the city of Beacon has been very helpful in navigating changes due to COVID-19, especially by allowing the expansion of outdoor dining space.
Jamal says that outdoor seating has been a lot of help for business and asks guests to continue wearing masks on visits to the restaurant.
