Chef Frankie, of Uncle Giuseppe's Marketplace, shows News 12's Lily Stolzberg how to make Chocolate Chip Ricotta Cookies.
INGREDIENTS:
1 Cup Old Fashioned Ricotta
1/2 Cup Butter
1 Cup Sugar
3 cups Whole Eggs
1 Cup Chocolate Chips
1 Cup Flour
2 Tablespoons Heavy Cream
1 Teaspoon Baking Powder
1 Teaspoon Baking Soda
2 Cups Powder Sugar
1 tablespoon Water
1 Teaspoon Vanilla Flavor
DIRECTIONS:
1. Mix powdered sugar with Vanilla flavor and water and mix until smooth and creamy. (set aside)
2. Add sugar and butter to mixer and blend creamy & smooth.
3. Add eggs, heavy cream, vanilla flavor to mixer.
4. Add baking powder & baking soda to mixer until creamy & smooth.
5. Add Polly-O Old Fashioned Ricotta to mixer and mix on low speed.
6. Add flour and mix on low.
7. Fill pastry bag using large round Piping tip and pipe out 1.6 in. round on tray 5 x 8 layout.
8. Bake 330 degrees for 12 minutes. Cool for 1 hour.
9. Dip tops of cookies by hand top with chocolate chips quickly before icing dries.
