Three Westchester women who have survived cancer have joined forces to write a cookbook.
Ilene Vasquez, Yvette Delgado and Jill Vallaro call themselves the "lunch ladies" due to their fondness for food. But it was not their love of lunch that brought them together, it was something else.
In recent years, the women have survived breast, colon and esophageal cancers. Cancer crept back into Delgado's life earlier this year when she received a pancreatic cancer diagnosis.
The ladies are using the trauma of their experiences to try to inspire others. That's why they got together to write and self-publish a cookbook titled "Stupid Simple Recipes."
They hope the book will encourage other cancer patients and survivors to not give up on life.
The women will be preparing some of the book's recipes in person Saturday at The Westchester mall. They say they will donate 25 percent of the book's proceeds to various cancer foundations.
