A Tarrytown woman is commemorating the upcoming inauguration of Kamala Harris as vice president by celebrating her Indian heritage through food.
Indian food is part of Mini Dhingra's identity. She's merged her culture into her professional life and is now running a successful online catering and dinner delivery company in Tarrytown called Samosa Shack. It serves up Indian cuisine that tastes homemade.
Her food is now being used to celebrate a validating moment in the Indian American community as Kamala Harris is set to become the first person of Indian descent to become vice president of the United States. Dhingras is marking the occasion by offering up a special menu this week to honor Harris' historic inauguration.
The menu includes Dhingra's famous samosas, a curry with vegetable dumplings and a savory cake.
