Chef Frankie, of Uncle Giuseppe's Marketplace, shows News 12's Lily Stolzberg how make a pignoli cookie.

INGREDIENTS:

· 8OZ ALMOND PASTE
· 1 CUP SUGAR
· ½ CUP 6X SUGAR
· TEASPOON CINNAMON OIL
· 2 TEASPOONS VANILLA FLAVOR
· 1 EGG WHITE (EXTRA LARGE EGG)
· 8 OZ ITALIAN PIGNOLI NUTS (PINE NUTS)

DIRECTIONS:

Mix almond paste and sugar until sandy texture.
Add one egg white, cinnamon & vanilla flavor mix until smooth.
Place batter in a piping bag and squeeze out onto baking tray with pan liner.
Top with Italian pignoli nuts.
Bake at 320* for 12 minutes cool to room temperature.
