Chef Giovanni Ruggerrio, of Uncle Giuseppe's Marketplace, shows News 12's Lily Stolzberg how to make a eggplant salad

INGREDIENTS:

8 ea. breaded eggplant cutlets.
1 cup red pepper strips.
1 cup yellow pepper strips.
1 cup green pepper strips.
1 cup sliced red onion.
1 cup Italian dressing

DIRECTIONS:

· Place eggplant cutlets on a cutting board and cut them into large pieces and place in a mixing bowl.
· Place all the peppers and onion into the mixing bowl.
· Add the Italian dressing and toss until all are incorporated.
