Roasted Oysters
Ingredients:

1 dozen shucked oysters
1 stick of butter
2 lemons
Panko
Grated Parmesan
Fried onions or leeks
Chives
Method: 
Shuck your oysters And hold over ice
Add stick of butter into pan.. keep on a medium heat. Let it start to brown while gentle swirling the pan. Once lightly browned. Remove from heat .
Mix Panko / Grated Parmesan / fried onions
Take a large pinch and place over raw oysters. Cover entire oyster thinly.
Take one tea spoon of brown butter and place over oyster and panko mixture
Place in a convection oven set at 425
Cook time is approximately 3-5 min. Pull once lightly golden brown
Chop chives fine. Place over the top of cooked oyster
Cut lemon wedges and serve !
