Chef Giovani, of Uncle Giuseppe's Marketplace, shows News 12's Lily Stolzberg how to make Skirt Steak Romania.
Ingredients
- 1 ea. white onion (sliced)
- 2 tbs olive oil
- 2 tbs butter
- 3 tbs butter
- 2 tbs flour
- 1tbs garlic (chopped)
- 1 tbs parsley (chopped)
- ¼ tsp black pepper
- ½ tsp salt
- ¼ cup red Wine
- 1 cup beef bone broth
- ¼ cup gravy master
Directions:
- In a sauté pan on high heat add the 2 tbs butter and allow it to melt and come to temperature.
- Once the butter is hot, add the onions.
- Sauté until a deep color is formed, remove from heat and set aside.
- In the same pan add the 3 tbs butter and the flour and cook until a roux is formed.
- Add the red wine, bone broth, salt and pepper and whisk until the sauce becomes thick.
- Whisk in the gravy master and set aside.
- Place the steak in a bowl and season with oil, salt, pepper, parsley and garlic.
- Mix well until the steak is fully coated and seasoned.
- Place steak on a hot grill pan and cook for 2-3 minutes on each side or until medium rare.
- Remove from pan and let rest for 5 minutes.
- Cut the steak into manageable portions and slice against the grain.
- Plate by shingling the steak on a plate and top with the onions and sauce.
