What's Cooking: Halloween Cake from Uncle Giuseppe's Marketplace

Items Needed & Ingredients:

  • 5” vanilla cake (11.6oz before cutting)
  • 7” gold board
  • #866 tip
  • 1/2 "French Pastry Tip"
  • #807 "XL Piping Tip"
  • #8 Piping Deco Tip
  • 1 oz Sunset Orange Gel Food Coloring
  • 1 oz Black Gel Food Coloring
  • Scissors
  • Green Scoop (2.66oz)
  • Flat Cake Comb
  • Knife
  • Vanilla Buttercream (29.2 oz)
  • 7.75 Angled Cake Spatula

Directions:

  1. Trim the dome of the cake and use it for cake crumbs in production (2oz loss).
  2. Evenly cut 3 layers horizontally. Top of the cake should be placed in the middle of cake assembly.
  3. With your Green Scoop (2.66oz) fill the cake with vanilla buttercream. Then place the next layer of cake on top. Proceed this step again to complete the build of the cake.
  4. Next, apply a decent amount of buttercream to your cake to crumb coat. Evenly spread the buttercream and comb smooth filling in any open spaces.
  5. Color your buttercream and set aside.
  6. With #866 tip fill a piping bag with orange buttercream. Proceed to make different size stars around the cake. Giving the monster a 'spikey hair' look.
  7. Using the #807 round tip, fill a piping bag with white buttercream. Add round circles in front of the cake. Creating the whites of the monsters’ eyes.
  8. Using the same #807 tip bag, give the monster horns. While piping, push the buttercream down by giving the buttercream a rippled look. Example shown in pictures below.
  9. Add facial features (pupils, eyebrows, mouth, etc) to bring the monsters to life.
