Ready for the summer barbecue? These hot honey ribs are full of summer flavors, and you can make them inside!

Ingredients:
1 rack St. Louis pork ribs
1 bundle fresh thyme
6-8 medium sized cloves of garlic (skin on)
1/4 cup extra virgin olive oil
3 tbs kosher salt
1 tbs plus 1 tsp black pepper
1/2 cup honey
1/8 cup apple cider vinegar
1/2 tsp cayenne pepper

Directions:
Place herbs and garlic on parchment lined baking sheet.

Season ribs generously with salt and 1 tsp pepper. Drizzle ribs with olive oil.

Place rack of ribs on top of herbs and garlic.

Preheat oven to 425 degrees.

Place ribs into preheated oven uncovered for 45 minutes.

Remove ribs from oven and allow to slightly cool before slicing ribs. Cut between the bones so you have individual ribs.

Prepare sauce:
Remove roasted garlic cloves from skin, mash them and place into large mixing bowl.

Add honey, vinegar, black pepper and cayenne pepper. Whisk vigorously.

Toss cut ribs with sauce and place back onto sheet pan pouring remaining sauce on top.

Place back in oven for 15-20 minutes.

Remove from oven, plate ribs and garnish with fresh thyme sprigs.
