What's Cooking: Seafood stuffed flounder from Uncle Giuseppe's Marketplace

Ingredients

3 ea. Flounder Filet

½ lb. crab meat (super lump)

20 ea. saltine crackers (crushed)

¼ cup mayonnaise

1 tsp. Dijon mustard

½ lb. shrimp (precooked and chopped)

1 tsp seafood seasoning

¼ cup red pepper (minced)

¼ cup scallions (Thinly sliced)

2 tbs. parsley (chopped)

2 tbs. lemon juice

3 ea. lemon slices

Instuctions

1. In a small mixing bowl add mayo, dijon mustard, lemon juice, red pepper, parsley, and scallions.

2. Add the saltines and seafood seasoning.

3. Mix all ingredients until they are incorporated well.

4. Fold in the shrimp and crabmeat being careful not to break up the crab pieces (You should be able to see the lumps of crab in the mix) and set aside.

5. Lay the filets on a flat surface

6. Place your desired amount of stuffing in the center of each filet.

7. Roll up each filet nice and tight.

8. Place the stuffed filets on to a papered sheet tray and cook at 350 degrees for 15 minutes.

9. Remove from oven and set aside.

10. Heat the lobster bisque and use it as a sauce by placing it on the bottom of the plate, top with the stuffed filets and garnish with sliced lemons and chopped parsley.
