Chef's Quick Tip: Chocolate chunk cookies

This week, Chef Jeff Abate from Aux Delices Foods, shows Tina Redwine how to make his famous chocolate chunk cookies.
Chocolate Chunk Cookies

2 1/2 cups all purpose flour
1/4 tsp vanilla
3/4 tsp baking soda
1/4 tsp sea salt
2 sticks unsalted butter, room temperature
3/4 cup sugar
3/4 cup brown sugar
2 eggs
6 oz semi sweet chocolate chunks

Stir together the dry ingredients and set aside. Cream together the butter and sugars on medium high speed with the paddle attachment of an electric mixer, scraping the bowl occasionally. Lower the speed and add the eggs and beat to combine. Slowly add the dry ingredients  and mix on low speed until combined. Stir in the chocolate chunks and mix to combine. Remove dough from the mixer and form into a log about 2 inches wide in parchment paper. Refrigerate several hours, or preferably overnight until firm. Dough can be frozen at this point).

Preheat oven to 350 degrees. Remove log from refrigerate and slice cookies into 1/4 inch pieces. Spray a non stick baking pan with vegetable spray. Place cookies 2 inches apart on sheet and bake for 11-12 minutes or until light golden brown.
Yield about 14 cookies.
